Always state the finish level

Levels 0 through 5 are an industry standard almost no homeowner knows exists. Level 4 is normal for most walls; Level 5 is needed for gloss paint and raking light and costs substantially more. Write the level on the estimate. Nearly every 'the walls look bad' complaint is a customer expecting Level 5 and paying for Level 4.

Ceiling height changes everything

Standard-height work and stairwell or vaulted-ceiling work are different jobs with different labor and staging. Note the assumption on the estimate and price high work separately, or you will absorb the difference on the one room that takes twice as long as the rest of the house combined.

Be explicit about paint

Customers routinely assume drywall includes priming and painting. It usually does not. One line saying 'primer and paint by others unless quoted' costs nothing and prevents the most common scope misunderstanding in the trade.
